When you’re in the mood for something different, try preparing this spicy tomato rice recipe. The blend of flavors and textures provides a unique twist on your typical side dish that’s perfect for entertaining or just dinner with the family. It’s easy to make and serves four, so everyone gets their own helping. You can use any type of rice you want to prepare this dish, but long-grain white rice is most traditional. Enjoy!


How to Cook Rice

The method of cooking rice largely depends on whether you’re cooking white or brown rice. Either way, it’s best to rinse your rice before cooking, then use a 2:1 ratio of water to rice in a saucepan. Bring to a boil, cover and reduce heat until steaming. Simmer for 15 minutes (white) or 35 minutes (brown). Turn off heat and let sit covered for 10 more minutes. Fluff with fork, cover again for 5 more minutes then serve.


How to Cut Tomato

In a small bowl, combine ingredients 1 and 2. Toss to coat tomatoes; set aside. Cut off top of each tomato, including skin and inner core (do not cut all way through). Scoop out flesh; discard. Chop enough scooped-out tomato flesh to measure 1/4 cup (or more, if desired); add to bowl with remaining ingredients. Stir in remaining ingredients; toss well to coat.


How To Make Onion Paste

First, you need to peel your onions. The way I do it is to cut off both ends, then cut each onion in half through its equator (but don’t separate them). Place each onion half flat side down on a cutting board and slice a 1/2-inch piece of skin off of each side where it meets the root end. Peel away these pieces of skin.

Make a container of homemade curry powder and you’ll have it on hand whenever you need it. There are many ways to make chicken stock at home, but here’s how I do it: (1) Place 5 or 6 whole chicken carcasses in a large pot and cover with water; (2) Let boil for two hours and then strain out all solids; (3) Allow to cool until safe to handle and skim off any fat that has risen to surface; (4) Use right away or freeze.

-1/2 cup of long grain rice -2 tomatoes -2 tbsp olive oil -1 1/2 tsp grated ginger -Salt and pepper to taste Directions: In a saucepan, add enough water to cover your rice. Add salt. Bring it to a boil and then add your rice. Lower heat and simmer for about 15 minutes, or until all of water is absorbed. Heat up a pan with oil over medium-high heat.
