How to Prepare the Ultimate Chicken Burger
The perfect chicken burger requires that you add the right ingredients and cook it to the proper temperature so that it’s juicy and flavorful without being undercooked. Use this guide to learn how to prepare the ultimate chicken burger. You can use these instructions with any cut of chicken, but thighs are especially good because they have a higher fat content than breasts, which makes them juicier when cooked thoroughly. Brining
Chicken, unlike turkey, doesn’t need brining. In fact, brining a chicken breast will yield a tough and stringy finished product. Instead of soaking your chicken in salt water for hours on end, start with fresh poultry that has been refrigerated for no more than 48 hours. Place your chicken breasts in a colander and rinse them under cold running water until all traces of blood are gone from their surfaces. Pat dry with paper towels before proceeding to step 2.
Searing
To prepare a proper chicken burger, start by seasoning your chicken breasts with salt and pepper. This will help add extra flavor to your patty. Be sure to let them sit out at room temperature while you heat up your grill or pan. It only takes a few minutes, but it will make a big difference in texture of both your meat and bun later on. Meanwhile, prep all your other ingredients. You’ll need lettuce, tomato, onion—and most importantly—buns! Once everything is ready and you've got the grill or pan hot enough that it sizzles when sprinkled with water (this will let you know you're ready), place each patty on its own spot and wait for about 2 minutes before flipping over onto another side.
Grilling
If you like burgers but are looking for something a little lighter, try preparing your chicken on the grill. While most of us think of hamburgers when we hear chicken burger, there’s no reason why you can’t substitute it for beef in your favorite recipes. By grilling chicken instead of frying it or baking it, you can reduce your total fat intake by nearly 40 percent and save hundreds of calories from fat each year. Plus, grilled chicken tastes better than anything fried. All you need is a lean cut of meat—like breast meat or thigh meat without skin—and some seasoning.
Assembly
The first step is to prepare and cook your chicken burger patty. Combine equal parts ground chicken breast and ground pork, then season with salt, pepper, and cayenne. Coat a cast-iron skillet in olive oil and heat on medium until hot. Form your patty into a rectangular shape. Cook for 5 minutes or until browned. Then flip over and continue cooking for another 5 minutes or until browned on both sides.
The Perfect Bun
While it's possible to make your own burger buns, there are several options that are easy and still very delicious. Try brioche rolls, pretzel buns or Hawaiian rolls. For something lighter, wrap your chicken burgers in Romaine lettuce leaves. (Just don't expect them to be as sturdy—or taste as good!) Whatever you go with, avoid overly dense and dry bread like sourdough or French bread. Freshly baked is best!
Toppings
Let’s be honest: The toppings are what make a chicken burger truly epic. When making your burger, start with a base of lettuce and add on as many toppings as you can handle. Whether it’s tomato slices, onion slices, pickles or bacon (make sure your bacon is cooked before placing it on top of your burger), stacking up your burger will add flavor while also minimizing calories. If you prefer, substitute veggies for meat toppings like cheese or guacamole. Remember: There’s no such thing as too much!
Condiments
Two of my favorite condiments on a chicken burger are BBQ sauce and spicy mustard. I like to spread some mustard over one side of a bun, then dip it in BBQ sauce, and then place a patty on top of that. Spicy mustard can be a great balance for sweet barbecue sauce, and also helps cut through all that grease! (That’s what she said!) You could also serve these with some homemade mayonnaise or ranch dressing if you really want to kick things up.
