Mixing things up with a different flavor for this winter, let me introduce you to my wonderfully tasting recipe of Brinjal mix food. For those who are not aware, this dish is mainly made from boiled or grated brinjals, mashed potatoes, onion and green chilies.
Ingredients:
2 large white potatoes
12-14 Brinjals
2 tsp. ginger-garlic paste
1-2 green Jalapeno pepper/s
1 medium onion
1 tbsp.
cumin powder
1 tsp. coriander powder
2 tsp. black pepper powder
1/4 tsp. turmeric powder
1/4 tsp. red chilli powder
1/2 tsp. salt
1/4 tsp. fenugreek seeds
1/2 tsp. oil
1 tsp. coriander leaves
1/2 tsp. mint leaves
1 tsp. water
Method:
Cut the potatoes into small pieces and boil them in water until they get half cooked. Remove the water from the boiling pot and mash the potatoes. Add the jaggery(raw) and green chilies. Mix them well. If you are using a mixer, add all the ingredients at once and mix well.
