How to Prepare the Perfect Korean Spicy Chicken
Korean spicy chicken, known as dak-kkochi in Korean, may be a spicy dish, but it’s loved by Koreans of all ages and eaten at almost every meal and at any time of the day. It can be served as an appetizer or side dish, or eaten with rice to make it a full meal.
Preparation
The key to preparing a successful Korean spicy chicken dish lies in getting all of your ingredients, spices and seasonings ready first. You will need about one pound of chicken breast for four servings. Cut up or chop each piece into smaller pieces until you have 1/2-inch cubes. You will also need 2 tablespoons of soy sauce, 2 teaspoons of minced garlic, 2 tablespoons of chopped green onions, 1 teaspoon of chopped fresh ginger root and 2 teaspoons ground black pepper (it is preferred that you use freshly ground pepper; however, if you do not have any on hand, regular store-bought pepper will suffice). Next up are your marinade ingredients. You will need 3 tablespoons white vinegar, 1/4 cup water and 3 tablespoons brown sugar.
Ingredients
1⁄3 cup brown sugar 1⁄3 cup mirin 1⁄2 cup soy sauce 2 teaspoons sesame oil 2 tablespoons minced garlic 2 tablespoons grated fresh ginger 1 teaspoon crushed red pepper flakes 1 teaspoon freshly ground black pepper 3 pounds boneless chicken breasts, cut into cubes 4 green onions, sliced into 1⁄2-inch pieces for garnish(optional) .Preparation: In a medium bowl, combine brown sugar, mirin, soy sauce, sesame oil, garlic and ginger. Stir well until sugar is dissolved.
Cooking
1. Cut chicken breast into small pieces and marinate with soy sauce, rice wine, sesame oil and garlic for 20 minutes. 2. Mix together sweet chili sauce, gochujang (korean red pepper paste), honey, sesame seeds and dark sesame oil. 3. Stir fry marinated chicken in oil until cooked (2-3 mins). 4. Serve with a variety of accompaniments including noodles, rice and vegetables of your choice!
Serving Suggestions
Serve it in tacos, or with rice and stir-fried veggies on a hot summer day. Put it on an English muffin with melted cheese for a great snack. Make burritos by stuffing it into tortillas (along with rice and beans) and adding salsa. Try baking in pizza dough topped with your favorite toppings. Serve over basmati rice as you would serve chicken tikka masala, i.e., either alone or with Indian flatbreads like naan. Put leftovers on top of salad greens to make Korean spicy chicken caesar salad—delicious!
