Curd Vada Ingredients

1 cup Batter (made from 4 cups of fine, fresh chana dal), Salt and turmeric powder, 1 Lemon, 2 Green Chillies, Chopped Coriander leaves (optional) .For Tempering: Oil for deep frying. Asafoetida Powder (Hing), Mustard seeds and Curry leaves. Method : In a bowl add 1⁄4 tsp of hing, salt and turmeric powder. To this add water as required for batter.

To prepare Curd Vada, you need 200 gm of Khoa (white gram), 1 cup of fresh curd, 1⁄2 tsp cumin seeds, 1 green chili chopped fine and salt according to taste.

What are Curd Vadas?

In South India, there are many different varieties of Curd Vadas. These are savory fritters made from a batter of soaked lentils and rice that is seasoned with mustard seeds, curry leaves, asafoetida and grated coconut. Another variation includes sautéed onion and grated coconut. Curd Vadas are eaten by dunking them in chutneys or sambar. Ingredients required for making Vadas

Curds-250 grams; Green chillies-6; Salt-1 tsp; Cumin seeds/Jeera-1/2 tsp; Urad dal/Ulutham paruppu - 1/2 tsp. Oil for deep frying Vadas.
A pinch of Soda bicarbonate/ Baking soda is added as a leavening agent and also helps in softening of dough. For seasoning: Oil-1 tbsp; Mustard seeds-1/4 tsp; Curry leaves a few. Asafoetida powder or Hing powder can be used instead of mustard seeds and curry leaves for seasoning. If you do not have these items, they can be omitted from the recipe too!

Preparing The Batter


Curd vadas are great snacks that can be prepared easily. In order to prepare these delicious delights, one needs a few ingredients such as rice flour, salt, lemon juice, yogurt and green chilies. Take 2 cups of rice flour in a big mixing bowl and add 1 teaspoon of salt and 1/2 cup of water into it. Add a pinch of black pepper powder into it and mix all ingredients well together by adding more water until a smooth paste is formed. Cover it with cloth for about 10 minutes so that the mixture becomes thicker by absorbing moisture from air completely. Now take some heated oil in another wide vessel and pour 2-3 tablespoons of batter into it with continuous circular motion until an even layer is formed at bottom of pan.

Deep Frying The Vadas

Once your batter is ready, it’s time to deep fry your snacks. To ensure a crisp texture, heat oil in a kadhai or wok over medium-high heat until it reaches about 175 degrees C. This can be determined by putting a little batter into it and seeing if bubbles form around it. Try not to overcrowd or overfill your pan with vadas as they need space between each other so that they don’t stick together while frying. When they are done turn them around using slotted spoon and cook till crispy. Take out on kitchen towel and serve hot.


Serving Suggestions

Vadas are traditionally served as an appetizer with coriander and mint chutney, sambar or kosambari. It is also relished along with a cup of hot filter coffee or tea in breakfast. Since these vadas are made with flax seeds, they will be healthy food choice for diabetics. Adding some black pepper powder and finely chopped onions will give more taste to it. Also, one can have it by dipping in a mixture of tomato sauce and chilli powder for a spicy taste.
