If you’re familiar with biryani, then you know that it’s one of the tastiest Indian dishes around. Traditionally served as part of a multi-course meal, biryani consists of rice mixed with spices and meats, and cooked in the oven or on the stovetop until everything is cooked through and tender. Making it in a claypot over an open flame gives it a great smoky flavor that makes this dish even more delicious than usual!



500gms mutton cut into bite size pieces, 500gms long grain rice washed and soaked in water for at least 2 hours, 5-6 green cardamoms (crushed), 50gms peeled almonds (roughly chopped), 25gms cashew nuts (roughly chopped), 25gms raisins, 10 gms pepper corns (soaked in warm water for 30 mins before adding to food), 7/8 cup oil or ghee, 1/2 tspn jeera, 1 tbsp. chopped ginger, 4 medium sized onions finely sliced and sauteed till golden brown in 1/4th cup of oil or ghee. 3 medium sized tomatoes diced and fried till cooked in 3 tbsp. of oil or ghee. Salt to taste .


Biryani is a kind of rice-based pilaf (pulao) that's popular in South Asian cuisine. Traditionally, it's made by layering basmati rice with meat or vegetables and saffron. A true biryani is layered three times, creating a textured dish with distinct layers of flavor and aroma. Commonly, various meats are used in biryani recipes including lamb, goat or chicken; fish is also sometimes used for vegetarian recipes. Popular spices include cumin seeds, cardamom pods and cinnamon sticks; bay leaves are frequently included as well.

Claypots are one of those cooking utensils you don’t think about until you actually need one. Then, once you start cooking with them, it’s hard to imagine life without them. Personally, we prefer claypots over all other types of pots because they trap heat and moisture and create a steaming effect while preventing evaporation that could otherwise dry out our dishes. If you don’t have access to a stovetop or an oven (in which case your slow cooker is your next-best option), using a pot that can be used on an open flame is essential for any of these Indian recipes requiring long braising times or high temperatures.

The rice you use for a biryani must be long-grain. Basmati is one of our favorites, as it absorbs flavors well and has a distinct aroma. Some use brown basmati for variety, but we love white so much that we never stray from it! Another essential ingredient to good Indian cooking is ghee—this clarified butter is tasty when used in dishes like curries, tandooris and marinades. You’ll also need onions and garlic to help add flavor to your dish—get them nice and caramelized before adding in any other ingredients or spices. Lastly, don’t forget an aromatic spice blend such as garam masala or curry powder! It will really kick up your dish’s flavor profile.
