Quick and easy Cherry Cobbler Recipe with Caje Mix
First, cook the butter in an oven-safe pan over medium heat until it starts to turn brown and release its nutty aroma, about 5 minutes. Add the caje mix and stir it until you smell its toasty aroma, another 3 minutes or so. Then add the cherries, sugar, and lemon juice and toss to coat with the caje mix. Transfer this mixture to an 8x8 baking dish and top with your flaky biscuits, then bake in the oven until golden brown, 15-20 minutes.
Pick your favorite fruit
It’s hard to go wrong when picking fruit for cobbler—any kind is delicious. But if you’re going cherry, we suggest you use Tartarian or Montmorency cherries. Tartarians are darker in color, sweeter in flavor, and won’t turn your cobbler an unappetizing red color (like Rainiers will). Montmorency cherries are more common, less expensive than Tartarians, and they can be used interchangeably (or combined!). If you like your cobblers a little tart, you may prefer Maraschino or Sour Cherries. Maraschinos can be found pitted or not; either way is fine for cooking with them.
Mix up your batter
At a time when food is nearly always on hand (thanks to ready-made meals, takeout, and microwavable snacks), whipping up your own dinner can be a welcome challenge. When you’re in charge of what goes into every dish—and when you use high-quality ingredients instead of relying on preservatives—you not only control what goes into your body but also how much of it. It’s healthier, cheaper, and tastier than anything you can get out of a package. If you’re struggling to come up with creative dinners that don’t require too much prep work or forethought (as most recipes do), we have two words for you: caje mix.
Pour it into a pan
Pour your batter into a pan. You can use a round cake pan, an 8x8 square baking dish, or individual ramekins for these cobblers. The recipe in our cookbook uses an 8x8 baking dish so that's what we're showing here, but you'll see below that it also works well in smaller dishes. Feel free to play around with both sizes—see which you like better! If you want to be all fancy, feel free to line your baking dish(es) with parchment paper for an easier time removing your cobbler after it has cooked. And/or drizzle some heavy cream over top of your pudding-cobbler mixture before pouring it into your dish(es) for extra tasty goodness!
Preheat oven to 350F/180C. Grease a 9x13-inch baking dish (or something similar). Place cherries on bottom of dish. Sprinkle cinnamon & sugar over top of cherries. Sprinkle caje mix over cinnamon & sugar mixture. Spoon brown sugar syrup over caje mix. Cover dish with foil and bake for 20 minutes at 350F/180C or until cherries are soft & juices are bubbling around edges of dish. Remove from oven, uncover, remove foil, and let cool slightly before serving warm!
Serve warm with ice cream
The best way to serve cherry cobbler is warm, with ice cream. Place your dish of cobbler in a larger dish full of hot water for about five minutes. Then top it off with some vanilla ice cream or whipped cream (or both). It’s that simple!
Some other tips
Cherry Cobbler Recipe with Caje Mix - It's spring, and that means fresh cherry season! One of my favorite ways to enjoy cherries is in this classic cobbler recipe using Caje Mix as the topping. This easy dessert recipe makes enough to feed an army! Enjoy!
Ingredients For Cherry Cobbler
10 cups of frozen sweet cherries (about 3 1/2 pounds), thawed, drained and patted dry or 2 quarts fresh sweet cherries, pitted and halved 2-1/2 cups granulated sugar 1-1/4 cups all-purpose flour 1 tablespoon baking powder 1 teaspoon salt 8 tablespoons unsalted butter, melted For Topping: 6 tablespoons butter 3/4 cup granulated sugar 1 cup self-rising flour 4 to 5 tablespoons milk Instructions In a large bowl using an electric mixer beat butter and sugar until well blended. Stir in flour until mixture is crumbly. Gradually stir in milk. Transfer dough to floured surface; knead gently just until it holds together.
Step 1 - Wash And Preheat Your Oven
Wash your cobbler pan and preheat your oven to 325 degrees F. If you don’t have a cobbler pan, that’s fine; you can prepare any kind of cobbler in an 8-inch baking dish. The only difference is that you might have more filling leftover after baking. Your cooking time may be longer if using a baking dish versus a skillet, but we think it’s worth it for all of those extra juices!
Step 2 - Mix The Dry Ingredients
You'll need: 2-1/2 cups of flour, 3 teaspoons of baking powder, 1 teaspoon of salt and 2 tablespoons of ground cinnamon. Take one cup flour, add 2 teaspoons baking powder, 1⁄2 teaspoon salt and a dash (about 1/8 tsp) ground cinnamon. Mix well until all ingredients are combined and store in an airtight container for about a month or two.
Step 3 - Add The Wet Ingredients
Add 1 cup of water, 1 can of cherry pie filling, and 1 teaspoon of vanilla extract. Let it come back down to a simmer for 20 minutes and then cover with foil. It is now safe to take off heat but keep covered for another 20 minutes so that it stays warm (It will help prevent your cobbler from drying out).
Step 4 - Stir Together And Pour Into A Baking Dish
In a medium bowl, combine 1 cup of brown sugar and 1/2 cup of Caje Mix. Stir well and set aside. Next stir together 2 tablespoons of butter, 6 tablespoons of cornstarch, and 3 cups water until you have a smooth mixture. In another mixing bowl combine one cup cherries that have been pitted or cut in half, 1/2 teaspoon cinnamon powder, 3 tablespoons flour (all-purpose), and 3 Tablespoons of sugar.
Step 5 - Bake In The Oven
Preheat oven to 350 degrees F. Butter a 8x8 pan and sprinkle caje mix on top. Pour cherries on top of caje mix. Step 6 - Baking In The Oven: Bake until golden brown and bubbly, about 20 minutes or so.. Step 7 - Serve And Enjoy: Serve warm and enjoy!
Step 6 - Cool Down And Enjoy!
