The Best Lime Juice Recipe

How many times have you needed lime juice, only to discover that you’re out of fresh limes? It’s happened to me plenty of times, and it seems like the only solution is to go to the store and buy some more limes...but that’s not always feasible! So I decided to learn how to make my own lime juice at home. It was surprisingly easy, and now I can enjoy fresh lime juice whenever I want it! Here’s how I did it...


Not all limes are created equal. Many times, limes found in restaurants or at your local grocery store won’t yield enough juice to satisfy your cravings for a specific recipe. If you want more lime juice without having to squeeze too many limes, try using a citrus juicer. This handy tool will help you get every last drop of juice from your lime and can even work with lemons, clementines, and other types of citrus fruits. By using a manual citrus juicer, you can save time in your kitchen by preparing for most recipes without needing to cut up extra limes or lemons.

For easier prep, you can use a juicer to squeeze your limes. But if you don’t have one, here are two methods to remove as much juice as possible from your limes: 1) roll them over a hard surface (like the counter or table) before slicing; 2) microwave them for 10-20 seconds. Both methods will soften their skins and make it easier to extract juice from them.

If you don’t have a juicer
Squeeze lime juice with your hands. Squeezing limes is a great way to extract juice if you don’t have a juicer or citrus reamer. For smaller amounts of lime juice, roll limes on a hard surface under your palm. To avoid staining your skin, put plastic gloves on before squeezing. Or mix water with salt, dip in a lime wedge and rub all over hands for easy cleanup!


For cocktails, use a muddler instead of blender
The trick to getting a cocktail with a smooth texture without overly pulverizing or overheating your ingredients is by using a muddler instead of a blender. To preserve lime juice, store it in the freezer.
Water expands when it freezes, so freezing won’t change lime juice’s flavor. If you’re in a hurry to serve your drinks, you can use frozen lime juice. Just be sure to thaw and shake it before using it in your cocktail or drink. Freezing lime juice will only keep its fresh taste for about 6 months. After that time, its quality will start to deteriorate, turning it cloudy and making it harder to dissolve into liquids or cocktails.

Other uses for lime
You can even use lime juice to make creamy desserts! When you puree limes with sugar and water, you get a tart yet sweet fruit juice that makes a perfect topping for cakes and pies. You can also use lime zest, which is simply grated peel, in baked goods such as muffins. Just add it in place of lemon zest when making your favorite recipes. You can also freeze lime juice into ice cubes or popsicles; they’re perfect on hot summer days!
