Ingredients:

  • 1 kg chicken, cut into pieces
  • 2 large onions, finely chopped
  • 3 tomatoes, pureed
  • 2 tbsp ginger-garlic paste
  • 2 green chilies, slit
  • 1 cup yogurt
  • 1 tbsp turmeric powder
  • 2 tbsp coriander powder
  • 1 tbsp cumin powder
  • 1 tbsp garam masala
  • 1 tbsp red chili powder
  • 1 tsp black pepper powder
  • 1 cup coconut milk (optional)
  • 3 tbsp vegetable oil
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

Instructions:

  1. Marinate the Chicken:

    • In a large bowl, mix the chicken pieces with yogurt, turmeric powder, and a pinch of salt. Marinate for at least 30 minutes.
  2. Cook the Base:

    • Heat the vegetable oil in a large pot or deep pan over medium heat.
    • Add the finely chopped onions and sauté until golden brown.
    • Add the ginger-garlic paste and sauté until the raw smell disappears.
    • Add the tomato puree and cook until the oil starts to separate from the mixture.
  3. Spice it Up:

    • Add the coriander powder, cumin powder, red chili powder, and black pepper powder to the pot. Cook for 2-3 minutes, stirring continuously.
  4. Cook the Chicken:

    • Add the marinated chicken pieces to the pot and mix well with the spices.
    • Add the green chilies and salt to taste.
    • Cover and cook for 15-20 minutes, stirring occasionally, until the chicken is fully cooked.
  5. Add Coconut Milk (Optional):

    • If using, add the coconut milk and simmer for another 5 minutes.
  6. Finish and Garnish:

    • Stir in the garam masala and cook for an additional 2 minutes.
    • Garnish with fresh coriander leaves.
