The Recipe

Take 400gms fillets of fish, cut into small pieces. Fry gently in 50gms oil till golden brown and set aside. Prepare 1/2 cup fried onion, 1/2 tsp ginger paste, 2 green chillies paste and add to boiling rice along with 1-1/2 cups boiled water and mix well. Add fried fish pieces and 3 tbsp roasted gram (chickpeas) powder, salt to taste. Mix well with a fork so that it does not stick together. Heat 20gms ghee in a pan and fry 4-5 cashew nuts lightly for garnishing; pour over preparation before serving to get crunchy texture (optional). Serve hot with cucumber raita or even tomato ketchup if desired.

Ingredients

- 3 cups cooked rice - 1 cup shelled and deveined prawns (about 50–60) - 1 cup sliced carrots - 6 small pieces whole coconut/coconut milk in container/Grated coconut (optional) - 2 tbsp mint leaves chopped finely (optional) - 1 lemon juice squeezed over a plate, then rubbed to fish. Get one cup of rice and add above spices, put that into a rice cooker or microwave for at least 4 minutes until soft and fluffy. Now mix all other ingredients gently with your hands on a wooden or glass table not on plastic. Preparing the Fish


The first step to preparing fish for a briyani is making sure it is completely fresh. If you are unable to get fresh fish, then any frozen will suffice. Make sure that you defrost your frozen fish properly so that you do not risk an upset stomach later on. Before marinating your fish, clean and remove any scales or bones from your cooked fish. You can do so by gently scraping along either side with a butter knife or small kitchen spoon until it has been removed fully. Once cleaned, marinate your fish in a mixture of chopped onions, tomatoes, curry leaves and green chilies (if desired). Make sure that each portion of each ingredient is adequately combined with your marinade prior to applying it to each piece of fish.

Preparing the Masala (Mixture)

For every five kilograms of rice take a kilogram and a half (1.5 kg) of moong dal. Soak it overnight, drain off excess water and grind it in to a coarse paste along with red chillies, chopped ginger, chopped garlic, coriander seeds and green cardamoms. Grind all together until you get a semi-paste that can be easily poured into boiling oil. It is good to add a pinch or two of turmeric powder while grinding so that it becomes almost golden in colour with no signs of impurities. The masala mixture should be sufficient for at least twenty servings/five kilograms (kgs) of rice.

Cooking Time

45 Minutes or less. Total preparation time is usually over 1 hour when considering marinating time and how long it takes to cook rice. One hour cooking time is not uncommon. The total preparation time can be shorter or longer depending on personal taste, however, many cooks prefer to marinate their fish for at least 3 hours prior to cooking. Additionally, if you are preparing chicken as well, you may need extra cooking time for that dish which may cut into your preparation time for briyani. Make sure you have enough vegetables on hand to complete both dishes before beginning any preparations!

Mixing with Coconut Milk

Most recipes will call for mixing fish with coconut milk. A great rule of thumb is to go heavy on meat and light on rice. We typically add 1/2 cup of rice to 1 pound of fish and vegetables. This will help ensure that you’re not eating more than 3 cups of food at a time, which makes up one serving size. For example, if we want to prepare 2 servings worth of food, we’ll double all ingredients except for rice (4 cups total). Using coconut milk allows you to eat healthier without feeling like you're sacrificing flavor; it’s especially important in Indian dishes because they have robust spices which can mask flavor from other sources. To make things easier, pick up a can or two in your favorite flavor!

Garnishing with Coriander Leaves (Cilantro)

Soak 1 tablespoon coriander seeds in water for 10 minutes. Grind them to a paste with little water. You can skip grinding if you have prepared it beforehand. Wash and wipe fish pieces with moist kitchen towel, cut into equal size pieces and marinate them with ginger-garlic paste, turmeric powder, salt and pepper powder for 15 minutes. Heat oil in a kadai add bay leaves (tej patta), cinnamon stick (dal chini), cloves (laung) and green cardamom pods(elaichi). Make sure they are well fried on medium flame so that they get separated.

Cooking the Rice


For traditional briyani, you’ll want to start cooking your rice with ghee or oil—butter adds a slightly different flavor and isn’t typically used for briyani. Lightly season your rice before you cook it. You can go heavy on spices if you like; just remember that some of them (cinnamon sticks and bay leaves) should be removed later so they don’t overpower your dish.

Cooking the Curry and Coconut Milk Sauce

To start, take one tablespoon of oil and begin heating it in a pot. As it heats up, add half an onion cut into slices. Cook these until they’re translucent and soft. Then, add two cloves of garlic chopped finely along with some ginger root that’s been grated. Stir all of these ingredients together for about 30 seconds and then add two tablespoons of curry powder. This should be cooked for another five minutes before adding in three cups of water along with a teaspoon each of salt and pepper. Finally, after 10 minutes you can take out half a tomato (deseeded) as well as a cup of coconut milk to make sure there are no added flavors to your curry later on down the line when cooking your fish in it.


Pan-fry your fish fillets over a medium heat until they are flaky but not overdone. Be careful not to burn them. If you’re in a hurry, you can also bake your fish at 350 degrees for about 10 minutes. Remove from pan and set aside.

Serving Suggestions

Serve with a raita and salad. You can also serve it with a side of steamed vegetables. Fish briyani tastes great when served hot, but can be eaten at room temperature as well. Also, some spices in fish curries tend to become bitter when they are heated again after cooling off, so it is best to eat it while fresh and hot. When serving, garnish with cilantro on top of each serving.
