Chocolate Sunbutter

Sunbutter might sound like an odd addition to your chocolate, but it’s actually delicious! In fact, this recipe calls for less sugar than traditional recipes, and has the added health benefits of sunflower seeds. Sunbutter can be used just like peanut butter in any recipe, or eaten right off the spoon (we won’t judge).


Chocolate Sunbutter

Use raw cacao powder, almond butter, and cocoa powder to make a simple sunbutter alternative. To make chocolate sunbutter, you can either melt all ingredients in a saucepan or food processor and add them to a traditional sunflower seed butter. Because raw cacao is quite bitter on its own, you’ll want to sweeten your sunbutter with agave nectar or honey—or, even better: maple syrup! Adding coconut oil is also another way to make chocolate sunbutter softer and easier to spread. If you aren’t sure if it will work in your smoothie blender or coffee grinder, just try adding one drop at a time until you get it right!

Ingredients

1 cup sunflower seeds, toasted and lightly crushed 1/4 cup cocoa powder 1/2 teaspoon salt pinch of cayenne pepper 3 tablespoons coconut oil, melted and cooled 2 tablespoons maple syrup 2 tablespoons chocolate chips (optional) Instructions:In a food processor or high-powered blender, combine sunflower seeds, cocoa powder, salt and cayenne. Process until all ingredients are combined. Add coconut oil, maple syrup and chocolate chips. Blend until smooth. Pour into glass jar with airtight lid; keep refrigerated for up to 5 days or freeze for up to 3 months (let thaw overnight in refrigerator before using).


Procedure

In a medium sized bowl, mix 2 cups of creamy natural peanut butter with 6 tablespoons of cocoa powder and 1 tablespoon of honey. Add up to an additional 1 tablespoon if you would like it less sweet. Blend thoroughly with a fork or whisk until all ingredients are well incorporated. Pour chocolate sunbutter into a jar or other container for storage. Store in refrigerator for best results but can be kept at room temperature for up to one week. Enjoy!

Almond meal is a great alternative if you can’t find sunflower seed flour or don’t have time to make it. It gives baked goods an almond flavor and is low-carb and gluten-free. The only problem with almond meal is that it absorbs more moisture than sunflower seed flour, so double check your ingredients list for extra eggs or liquid! (We recommend about 1/4 cup)


While you’re likely to use cocoa powder as an ingredient in many desserts and treats, there are other uses for it. Mixing a tablespoon of cocoa powder with two tablespoons of sugar makes a great dry shampoo. You can also mix cocoa powder with sugar, cinnamon and grated orange peel for a cupcake topping or icing. Additionally, if you have sensitive skin, simply making yourself a face mask by mixing together 2 tablespoons of honey and one tablespoon of cocoa powder can be very soothing.

If you want a chocolate sunbutter that's sugar-free, simply substitute maple syrup, honey or brown rice syrup for regular sugar. Be careful with maple syrup and honey, however, because although they are natural sweeteners they can also be very caloric in large quantities (1 tablespoon of either contains around 100 calories). For a more indulgent treat that won't blow your calorie count out of the water, go with brown rice syrup; it has a nice molasses taste and is made from whole grains. It's still not something you want to eat by itself on its own (believe me) but in small quantities it works well as an alternative sweetener.

You can also use regular sunflower seeds if you don’t have a powerful food processor. Using a high-speed blender like a Vitamix is best for pulverizing seeds into a powder. Seeds that aren’t completely ground will taste bitter in your final product, so it’s important to get it as fine as possible. You might need more or less depending on your brand of seeds; just keep testing and tasting until you have what you like! Add one cup of sunflower seeds at a time and blend away, then add another cup until they’re all blended. Blend for 3-5 minutes or longer until everything is smooth and creamy with no lumps or clumps in sight.

Coconut oil is an excellent substitute for your typical vegetable or sunflower oil. It’s a plant-based saturated fat, which means it’s more likely to be stable at higher temperatures and won’t go rancid as quickly as other kinds of oils. If you want a little more tropical flavor in your chocolate sun butter, go with coconut oil; otherwise, either canola or avocado are fine options.


Blend sunflower seeds, cacao powder, coconut oil and vanilla extract together in a food processor. Pulse until it reaches a creamy consistency similar to peanut butter.
