Do you want to make the best ice cream of your life?

If you want to make the best ice cream of your life, you need to know that making homemade ice cream isn’t as hard as it seems. In fact, once you get the hang of it, there are so many different ways to make it that you won’t be able to settle for store-bought again! But it starts with one simple technique called the custard method that will turn out perfect ice cream every time...I promise!

Is butter good for you?

Butter isn’t a health food and can contribute to weight gain if consumed in excess. But butter, which is rich in vitamin A, vitamin D, and other nutrients, is better for you than many healthier alternatives such as margarine (which has more fat than butter). And if you use it sparingly, it won’t pack on pounds. This means that a little bit of butter here and there probably won’t negatively impact most people. Some people may even see some benefits from including a little bit of butter in their diet.
The health benefits of butter

Butter is high in fat, but it’s actually a good kind of fat. Butter contains medium-chain triglycerides (MCTs), which may promote weight loss and even have anti-inflammatory properties. There are plenty of other health benefits too, like lowering risk for diabetes, preventing heart disease and helping build strong bones. Try it as a healthy substitute for margarine or unhealthy fats like oil or lard—you might just be surprised at how much better butter is for you than what you’re used to!

How to choose quality dairy products

Quality dairy products will always include a disclaimer that says made with real butter. However, even if it doesn’t say made with real butter, it might still be a quality product. If it says that it is made with artificial butter, however, then chances are it is not very good at all. If there is no such disclaimer, then proceed with caution and check out other reviews before you purchase. You should also keep in mind that even if an ice cream does contain real butter or other high-quality ingredients like cocoa or nuts; an overall poor quality recipe can still result in an unpleasant final product.

Flavor ideas

Make a key lime butter. Make a hazelnut caramel. Make chocolate with sea salt, or olive oil and rosemary, or matchsticks of red bell pepper and chiles. Or how about ginger and green tea, blackberry and tarragon, goat cheese and balsamic vinegar, bacon and chocolate — again. See where I’m going with this? It doesn’t have to be limited to one flavor. Have fun! Be creative! Be bold! Be outrageous! Just don’t be boring because there is nothing worse than boring vanilla ice cream with sprinkles on top. Unless it's plain vanilla that someone has accidentally dropped strawberries into while they weren't looking.

Creating a solid recipe base

The first step in making any recipe is to create a solid base. The number one way I do that is by using simple combinations. For example, chocolate and peanut butter are a very well-known combination, so why not use it as a base for your ice cream? It’s tried and true, so there’s no risk involved! Chocolate also tends to have a more complex flavor profile than vanilla which can help counterbalance some of the flavors from other ingredients.

Combining ingredients in the proper order

Many recipes require that ingredients be combined in a specific order. For example, if egg yolks are to be added after sugar and water have been mixed, it's crucial that sugar and water be added first. Too often, novice bakers will add egg yolks after everything else has been combined when following a recipe; in so doing, they end up scrambling both eggs and batter because they're improperly combining ingredients.

Stabilizing ingredients with sugar

In homemade ice cream, stabilizing ingredients and sugar work together. Stabilizers like xanthan gum or gelatin help prevent ice crystals from forming during freezing, which means a smoother texture for your finished product. Sugar works with these ingredients by lowering the freezing point of water and helping keep liquid from recrystallizing as it freezes. Add just enough stabilizer so that your mixture barely thickens; an ideal custard will flow slightly when stirred. If it becomes too thick, thin it out with milk before chilling. The more milk you add, however, the less sweet it will be after churning and freezing—so don’t overdo it!

Adding toppings and mix-ins

When it comes to homemade butter ice cream, you can certainly play around with adding various toppings and mix-ins. You can add nuts, fresh fruit, or chocolate syrup before placing it in the freezer or sprinkle a combination of ingredients on top after it’s been churned. The possibilities are endless! So go ahead and give your guests something truly special by serving them homemade butter ice cream. It will be creamy, sweet and delicious. And they will love you for it! (and so will their tummies)
