Chinese Fried Rice Recipe

A little while back, I went to an authentic Chinese restaurant with my family and fell in love with their fried rice recipe. The dish was very simple and straightforward – just rice, eggs, veggies, and some protein – but it was delicious, and I had to figure out how to recreate it at home! Here’s the recipe that I came up with after several tries. Enjoy!


Preparing The Pan
A large wok is a good option for stir-frying because it allows you to cook multiple ingredients at once. If you don’t have a wok, a large skillet will do. Choose an iron or steel pan with sloping sides and ideally (but not necessarily) with thick walls; it should be roughly 10 inches in diameter. Next, make sure your pan is hot enough to ensure that everything cooks quickly. Heat up at least 2 tablespoons of vegetable oil over high heat until it starts smoking, or use a deep-fry thermometer to see if your oil has reached 350 degrees Fahrenheit—the ideal temperature for stir-frying. The pan should be smoking when you begin cooking.

The secret to delicious fried rice is using freshly cooked rice, preferably day-old. When cooking fresh rice, it’s best to first use a 1:1 ratio of water and raw rice. Bring to a boil and then simmer for 15 minutes or until all liquid has been absorbed. Strain in colander and rinse under cold water to ensure you don’t burn yourself while handling it later.


Preparing The Vegetables
Wash and drain all of your vegetables, then chop them up into small pieces. Stir-frying requires small pieces to cook faster, and they are easier to pick up with chopsticks too. Cut your onion into small chunks so you can use it in a lot of different bites throughout your stir-fry.

Cooking The Meat
To cook meat, heat a skillet over medium-high heat and add 1 tbsp. vegetable oil or peanut oil. Sear steak for 2 minutes on each side for medium rare (4 minutes for medium). Remove from pan and let rest 10 minutes before slicing against grain of meat. Sear pork belly slices 5–6 minutes per side until desired doneness, then remove from pan and set aside in a bowl.


The key to a good Chinese fried rice recipe is to use fresh, high-quality ingredients. Your fried rice should be colorful and full of life—don’t use brown or limp vegetables. The same goes for your eggs—use a fresh egg instead of one that’s been sitting in your fridge for weeks.
