What is hung curd?
Hung curd is a type of Chinese cheese. It is also one of the most famous types of Chinese cheese. This kind of cheese is made from fresh cow's milk and needs to be hung in the air for a long time due to its particular production process.
The way that this type of cheese is made involves a long fermentation period where it hangs in a specific environment that keeps it cool and moist. The process can take months before it becomes ready for consumption. Generally, the lengthier the fermenting process, the more flavorful and rich tasting the final product will be.
How to cook Hung curd
Step 1: Line a colander with cheesecloth and place it over a bowl.
Step 2: Pour the fresh cow’s milk into the colander and let it drain to make curds.
Step 3: Carefully remove the curds from the cheesecloth and place them in a large pot.
Step 4: Add salt, black pepper, dried ginger powder, and soy sauce to taste in to the pot of curds.
Step 5: Add water to cover the curds in the pot.
Step 6: Bring them to a rolling boil for about 20 minutes or until they are cooked thoroughly and all of the water has evaporated off completely.
Step 7: Transfer them into individual containers and let them cool before refrigerating for up to one month
